Saint Peter named among world’s top restaurants
Saint Peter, the acclaimed seafood restaurant led by Josh and Julie Niland in Sydney’s Paddington, has been recognised among the globe’s premier dining destinations, landing at No.66 on The World’s 50 Best Restaurants 2025 extended list.
The honour marks a significant leap for the venue, up 32 places from its No.98 ranking in 2024. The extended list features 100 establishments across 25 countries and 37 cities, placing Saint Peter alongside culinary hotspots from San Francisco to São Paulo.
“What an outstanding achievement,” Josh Niland said on Instagram. “Julie and I couldn't be more grateful and proud of the superhuman efforts of the entire team… Alongside our own team, we celebrate the long list of suppliers, producers and artisans that make Saint Peter the special place it is.”
The restaurant’s rise has been driven by Niland’s pioneering gill-to-fin approach to seafood, which repurposes the entire fish – including offcuts such as bones, scales and offal – into refined, flavour-forward dishes. His commitment to sustainable practice has influenced chefs globally.
Nigella Lawson has been one of Saint Peter’s most vocal admirers, calling Josh Niland “a genius” and praising dishes ranging from fish charcuterie to coral trout bone noodles. “His inventiveness, delicate touch, exquisite care, and joyful gift for flavour and texture just bowl me over,” she shared.
Having recently relocated to a larger venue beneath The Grand National Hotel, Saint Peter continues to attract international acclaim, underscoring Australia’s growing impact on the global culinary stage.
