Guy Grossi parts ways with Brisbane's Settimo as Westin prepares new concept

Celebrity chef Guy Grossi is set to exit Brisbane's dining scene this weekend, with his Italian restaurant Settimo at The Westin Brisbane closing its doors on Saturday after a three-year run.

The 150-seat Amalfi-inspired venue on Mary Street will host its final service this Saturday, with the hotel confirming the closure aligns with the natural expiry of its contract with Grossi on February 21.

The parting was framed warmly by both parties. "Our partnership with Guy Grossi comes to a natural close," the restaurant wrote on social media. "We're incredibly grateful for everything we've created and celebrated together."

The Westin Brisbane echoed the sentiment in a formal statement, saying the collaboration had brought "a vibrant taste of Italy to the heart of the city" and acknowledging Settimo's contribution to Brisbane's broader dining scene over its three years of operation. "We are incredibly grateful for what we have built together," the statement read.

The hotel was quick to signal continuity, confirming the space will not remain dark for long. Executive chef Massimo Speroni — described by the property as award-winning — will lead a new restaurant concept set to launch in the coming months. Neither Grossi nor a hotel spokesperson was available to elaborate further.

The Brisbane closure is the latest development in a period of significant change for the Grossi hospitality group. In October, the Grossi family sold its Melbourne restaurant empire — encompassing long-standing venues Florentino, Cellar Bar and Grossi Grill — to Edition Hospitality Group. With Settimo now closing, Garum at The Westin Perth is understood to be the sole remaining venue operating under Grossi's stewardship.
