Hospitality graduates to inspire at Open Day

Leading Australian restaurateur Matteo Pignatelli, with Executive Chef and Kah-wai (aka 'Buddha') Lo  who are both graduates of William Angliss Institute will share some of their tips and tricks at the upcoming William Angliss Institute Melbourne Open Day on Sunday 13 August.

Matteo Pignatelli of Matteo’s restaurant in Fitzroy will share some of his secrets for success at the helm of one of Melbourne’s top dining institutions with his executive chef Kah-wai (aka 'Buddha') Lo doing a tantalising cooking demonstration.

Chef Kah-Wai was awarded the 2015 Gordon Ramsay Excellence Award, competing against five other Gordon Ramsay employees at Restaurant Gordon Ramsay in London. He originally completed his apprenticeship under Brendan McQueen at Matteo’s and then worked under the direction of chef Raymond Capaldi at Hare and Grace before moving to the UK.

Matteo graduated from William Angliss Institute with a Diploma of Business in Hospitality Management in 1989 and went on open Matteo’s in North Fitzroy in 1994.

As the President of the Restaurant & Catering Australia (RCA) National Board and a member of the board of William Angliss Institute, Matteo is passionate about industry training.

Matteo said working together for the next generation of hospitality professionals is vital and he wants to encourage more restaurants and hospitality businesses to become involved in industry training.

“I believe in training chefs not cooks and restaurateurs not waiters.

"William Angliss taught me a great deal about management styles, techniques and systems. My diploma studies gave me an excellent insight into all aspects of running a successful hospitality business," Matteo said.

Hospitality students at William Angliss Institute are gaining first-hand industry experience working with a range of industry partners both externally and at the Angliss Restaurant located at the Melbourne CBD campus.

As Australia's largest hospitality training provider, by studying at the Institute, students can gain the skills and knowledge that will allow them entry into Melbourne's world class hotel and bar industry, setting them up for supervisory and leadership positions internationally too.

William Angliss Institute works in partnership with the Australian Hotels Association (AHA), Australian Leisure & Hospitality Group (ALH), Restaurant and Catering Association of Australia (R&CA) to provide training to people employed or seeking employment in the licensed hospitality industry.

The training is designed to give employees a stepping-stone to hospitality qualifications and encourage a high standard of work, in light of legislative demands and increasing liability. Our compliance short courses ensure industry standards are met and that employees and employers comply with requirements. These compliance courses include: Food Safety Courses, liquor courses (Responsible Service of Alcohol), RSG Refresher, and Pre-employment courses.

At Open Day 2017, an extensive line-up of information sessions and hands-on activities will give potential students the chance to learn about the foods, hospitality, tourism and events industries:
