Mandatory audits of Brisbane food businesses have revealed shocking scenes - including grime and pests found in some popular eateries.

But the Brisbane City Council says its Eat Safe program is lifting standards across the city, giving diners peace of mind through its star rating system.

Among the stomach-churning scenes from some of Brisbane’s worst restaurants included rodents in cupboards and kitchens caked in disgusting grime.

Up to 44 safety standards are checked, and businesses face severe punishment, with the Council making no apologies for shutting down restaurants posing a health risk to diners.

It took 34 businesses to court last financial year, claiming $700,000 in fines, while 23 food licences were suspended and six cancelled all together.

The worst - Pho Ha Long in Upper Mount Gravatt - was fined $60,000 and shut down, as was the Alibi Room in New Farm and Little Lily in Kelvin Grove.

Others, however, have improved.

The Beach House was fined $38,000 but is now a four-star safety rated restaurant.

The Eat Safe program has been running since 2010, and the council says it's been a success.

Last financial year, 90 percent of businesses audited scored 3 stars or above, earning them the right to proudly display their rating.
