Watermark sets burger benchmark

IT IS official - the state's best pub burger is served at the Watermark Hotel, Glenelg.

At the competition's final round held during the Royal Adelaide Show, the hotel's head chef a la carte Michael Henderson gobbled-up the title with the Moo Baa Burger, in the Australian Hotels Association SA & Rare Medium Pub Burger Challenge.

The mouthwatering burger comprises a 250-gram 100 per cent Wagyu-beef patty, pulled braised lamb, James Squire cider-braised onions, Jarlsberg cheese, mixed lettuce, American mustard, and finished with a hickory smoked barbecue sauce.

The burger has been on the menu throughout the hotel for a few months but since the win, sales have quadrupled.

"We were doing around 40 to 60 a week but in the week after the burger competition we sold 200 and with more promotion it should increase more," he said.

"It is good to see us win and get our name out there for the best pub burger," he said.

It was the second time Michael had entered, but this year he was "hungry" to win. "A couple of times before the competition I travelled to Melbourne to get ideas and figure out what I wanted to make for the competition," he said.
