Pont Dining Room opens with a celebration of Australia's culturally rich flavours

Pont Dining Room, a refreshed restaurant nestled within Intercontinental Sydney’s heritage-listed Treasury Building, has opened its doors. Approachable yet sophisticated, Pont Dining Room celebrates the rich tapestry of modern Australian flavours in the heart of Sydney’s CBD.

Under the stewardship of Chef de Cuisine, Kanishka Amunugama, previously at Mount Lofty House, Pont Dining Room showcases a commitment to the finest locally-sourced, high quality produce from across NSW. The menu features an array of opulent seafood dishes and grilled meats, with each dish infused with elements of char, smoke, and flame, paying homage to the kitchen's char grill.

To start, guests can expect the Bangalow Sweet Pork with chorizo jam and vegemite butter and Bluefin tuna with fried capers, fine herbs, finger lime and bonito mayonnaise - inspired by the beauty of the Botanical Gardens just steps away from Pont. Mains include Black onyx brisket and tenderloin, with compressed pear and beef fat hash; and Pumpkin Agnolotti with vanilla butter, hazelnut and radicchio.

The signature Kimchi Fermented Fries with a Gruyère sauce and Sourdough Crumpets with white anchovies chutney, whipped goats cheese and lemon thyme are also not to be missed.

Sweet cravings find satisfaction in desserts like the Hunted and Gathered Chocolate Mousse with brown butter crumb and raspberry crisp and the Ricotta Mille Feuille with caramelised butter pastry and orange blossom syrup.

We wanted to create a menu that maximises the potential of every ingredient, leaving no element wasted and spotlight sustainable sourced, seasonal produce.”

Complementing Amunugama’s cooking, the esteemed wine list includes organic and biodynamic wines from local and international producers celebrating hero flavours from the menu. A refreshed cocktail menu inspired by Australian flavours includes elevated serves such as the Pont Sour featuring Uzu Gin, Davison’s Plum and Junmai Sake and a Garden Walk incorporating Los Arcos Tequila, Kiwi, Bush Mint, Sage, Eucalyptus.

Refreshed contemporary interiors, with a lighter colour palette of ocean blues and rustic but refined wood finishes and botanicals provide an elegant backdrop for diners. Meaning bridge in French, Pont Dining Room is located on Bridge Street in Sydney’s vibrant epicentre, Circular Quay. Built in 1851, the historic sandstone building has been carefully restored to share the treasured stories of Sydney’s past.

Pont Dining Room also features a private dining room for up to 12 guests, and a semi-private dining room for up to 25 guests and wine tastings. Bookings for Pont Dining Room are now open.
