Enter the George on Collins

Melbourne has a $4 million new eatery and bar at the George on Collins.

Located in the basement of the city’s iconic George’s building, the George on Collins which opened on June 23 was created after the Long Room was retired and rebranded.

With interior design by Hecker Guthrie, the firm that produced Ugly Duckling, Ruyi and Longrain, the George on Collins has bright ceilings and white marble tables, giving it a completely different feeling from anything found above ground.

More importantly, it will be open all day.

That means people can head there on their way to work in the CBD for breakfast and a cup of java and then pop in after work for drinks, like the Collins Street Mule, which is actually a berry-driven Moscow Mule or Roguish Tendencies, a martini with thyme infused honey and savoury vermouth.

Chef Tom Brockbank has created five menus deployed during the day that offer everything from breakfast through to late-night snacks. People will also find plenty of antipasto, cheese and charcuterie boards, sliders, fish tacos and polenta fries. There will also be a big focus on sharing so the menus will have larger plates such as the 12-hour lamb shoulder, which is aged for 14 days then slow-cooked.

The dining room in frosted glass has custom-made furnishings. It can seat 80 people.

With a clientele drawn largely from the business crowd, the venue will also have nightly rotating DJs and a private dining room

The wine list has been put together by sommelier and maître d’ Ainslie Lubbock who has great experience from Attica, The Royal Mail Hotel, Pei Modern and Cutler & Co. Lubbock is focusing on small batch, handmade wines produced by some of Australia’s best wine makers.

That’s in addition to the extensive range of local and imported beers and spirits.
