Pullman Melbourne On The Park for destination dining

The Pullman Melbourne On The Park is now being transformed to attract discerning diners.

Work is now underway transforming the venue’s arrival areas, reception, ground floor interior spaces and its bar and restaurant.

The redevelopment will change the ground floor completely. The external streetscape will be connected with the internal lobby, restaurant and bar.

Its interconnected spaces will be radically redesigned. The hotel design will be completely in line with the Pullman Hotels & Resorts global cosmopolitan brand.

The plan is to create a new all-day destination dining concept with the Cliveden Bar & Dining, scheduled to open mid-August.

 The $6 million redevelopment of the hotel’s ground floor interiors will see the complete makeover of the restaurant and bar

It will also have deep historical roots with its connection to ‘Cliveden Mansion’ – one of Australia’s grandest social houses. Adjacent to the MCG, it was built in 1887 and converted to luxury apartments and later a hotel. The location put Cliveden Mansion right at the centre of Melbourne’s elite scene, a place where everything was happening.

The Cliveden Bar & Dining will create an all-day evolving contemporary dining experience, one that changes as the day moves through its different stages.

Guests will be treated to an oversized bar and double sided fireplace. Drinks specialists will be preparing cocktails.

The aim is to create a space that offers a relaxed yet welcoming atmosphere for hotel guests and Melbournians alike.

Executive chef John Ross will be in charge of the Cliveden Dining.

He will be creating a menu that will have a modern buffet interpretation.

Diners will be treated to themed menus celebrating seasonal ingredients and international flavours creating a touch of variety through the year. The menu will draw from local artisan producers and it will be influenced by Melbourne’s unique, rich and diverse European background and history.
