Four Seasons Hotel gets Mode Kitchen & Bar

The Four Seasons Hotel in Sydney has had a complete makeover with the addition of the Mode Kitchen & Bar

The former Pei Modern space has been transformed.

As part of these changes, it is launching the Mode Kitchen & Bar in July, basically rising out of the ashes of Pei Modern which closed in February after being open for two years.

The Four Seasons has bought in Francesco Mannelli (ex-Balla, est and Uccello) as head chef.

The aim is to create a balance between casual bistro and fine dining as the latest addition to Sydney’s burgeoning CBD dining scene.

The Pei Modern space has been completely overhauled by renowned Sydney design team Luchetti Krelle which has done projects like the Blackwood Pantry in Cronulla, Bar Brose in Darlinghurst, Tequila Mockingbird in Paddington and the Tilbury Hotel in Woolloomooloo.

 The designers have drawn heavily from the glamour of the 1920s.

Diners will be sitting back in a space of velvet, polished brass, marble and leather finishes.

The aim is to create a space that harkens back to the grand days of Art Deco hotels. 

They have enclosed the restaurant in fluted glass. This creates a dining setting that is more intimate and one-on-one for people enjoying a night together.

The Mode Kitchen & Bar will have space for 200 guests. The design has a number of options for diners. They will find stools at the new central bar, or lounge seating. There will also be a chef’s table, banquettes and two private dining spaces.

Mannelli will be creating simple dishes drawing from his rich experience in fine dining, focusing on the best seasonal produce including calamari from South Australia, New Zealand scampi and fresh truffles from Tasmania.

The Mode Kitchen & Bar will be located on the ground floor at the Four Seasons. It will be open for lunch and dinner seven days a week from mid-July.
