This week we head to Sydney for a Chocolate Artisan and South Pacific Cacao masterclass in chocolate making.

With over 20 years’ experience in the culinary arts, Jessica expertly takes us through sourcing, sorting and roasting the cacao beans to get those perfect nibs ready for the process of making her signature Chocolate Pod.

Utilising the BAKERTOP MIND.Maps™ BIG PLUS combi oven to roast the cacao beans and coconut with their own specific settings - saved as a program to achieve identical and perfect results with every use. 

Having travelled the world – working, studying and teaching in some of the finest establishments in the industry, Jessica sources the best ingredients and equipment from around the world including the finest chocolate from Switzerland, France and Belgium, as well as farm fresh honey and free range eggs. 

Jessica also offers master classes in chocolate, sugar art, patisserie and confectionery and is a regular at our UNOX stand for many tradeshows, demonstrating the art of chocolate tempering, candy making and baking.
