The restaurant was one of 86 in Queensland this year to be granted the prestigious award.

Co-owners Andrew Smith and Alex Weston said they still had few clues as to what they were being judged on.

"We just do what we do. We work at a consistent standard and don't dip below that," Mr Smith said.

Co-owner Alex Weston said the restaurant staff set their own criteria for serving high standards of service, food and drink.

"Our criteria must fit into theirs," he said. "In the last year, we've gotten more settled. It's become easier to do what we're doing.

"We've also had a lot more fun.

"We like to keep it vibrant and look at food trends. We're also inspired by what is getting produced locally."

Veraison offers an a la carte menu, a five-course degustation menu and a wine cellar boasting more than 500 bottles, including local wine.

In 2012, the restaurant became Toowoomba's first to be awarded the chef's hat.
