Four Seasons Hotel Sydney will become the newest home for highly-acclaimed chef, Mark Best’s internationally recognised bistro, Pei Modern.

Taking over the space currently operating the hotel’s ground floor restaurant, The Woods, Pei Modern which debuted in Melbourne in 2012 is set to open in Sydney on October 15. 

The restaurant will immediately become an extension of the 531-room hotel’s current meeting and events services, offering some 1653sq meters of function space.  Pei Modern is expected to be well suited for delegates using the hotel for team building breakout sessions.

The full menu remains under wraps, but is said to feature its popular dishes including Sauternes custard and Jerusalem artichoke with duck egg and truffle. Architect Helen Rice has been appointed to create the venue’s new look and feel.
