Jared Ingersoll steps in at Red Rabbit

New project: Jared Ingersoll is at Red Rabbit.Claude's restaurant famously had only a handful of head chefs during its 37-year reign, but just a few months after Red Rabbit opened at the site the new restaurant is about to have a change of guard, with Jared Ingersoll stepping in.

Ingersoll, who made his name at Danks Street Depot, has been spotted at Red Rabbit so frequently that observers thought he was either a major fan of its food or getting involved with the start-up.

Ingersoll confirmed the latter, starting work there today, although it won't necessarily be a long-term commitment.

''Rather than be involved with my consultant hat on I thought I'd get in there and have some fun. There's a young lad from America who has just touched down in Australia, so we'll work in the kitchen together and see how it goes,'' he says.

Ingersoll isn't exactly known for Asian food, but says he has worked in Hong Kong.
