We all know our fine-dining chefs are opening burger joints and Sydney is on track to eclipse Naples for pizzerias.

But just when you fear this city is getting predictable, along comes Gen Next.

Sydney's bar movement is pushing boundaries and getting even more creative; The Hunter is serving mini crocodile skewers, wild boar little dogs and emu sliders in Mosman, just a short kangaroo hop from Taronga Zoo.

Owner Steve Hiles says Giant Design was given the brief of ''James Bond goes safari''.

Hiles is already looking at another venue, in Neutral Bay, where he might explore the theme of jungles of Latin America.

James Viles, the chef at influential Bowral restaurant Biota Dining, is also on the lookout for real estate to open a Sydney bar.
