Guy Grossi to open two venues at Fortis' $330m Richmond Square precinct
Celebrity chef Guy Grossi will operate two ground-floor hospitality tenancies at Richmond Square. The near-complete mixed-use development is in inner-city Melbourne and comes from developer Fortis.
Grossi, who took over his father Pietro's Bourke Street institution Florentino and rebranded it Grossi Florentino, said the project offered a chance to build a hospitality offering tied to a wider placemaking strategy for the precinct.
"There was a genuine alignment with Fortis' vision for Richmond Square and an understanding that hospitality plays an important role in how people experience a place," he said.
"Great hospitality is about creating spaces that people feel connected to and return to time and time again.
"We're excited to be working with Fortis to create venues that contribute to the life of the precinct and become part of the broader Richmond community."
It is not the first time Grossi has teamed up with property developers.
Commercial Real Estate notes he partnered with the Grollo family in 2010 to launch the Merchant restaurant at Melbourne's Rialto, and has also run the fine dining offering in the Melbourne Cricket Club's Committee Room. His Amalfi-inspired Settimo restaurant at the Westin Brisbane has since closed, though he continues to oversee Roman-cuisine venue Garum at the Westin Perth.
The Grossi family has built a string of Melbourne restaurants, pubs and bars over more than four decades, though last year the Grossi Group sold a portfolio of eateries including Grossi Florentino, The Grill, The Cellar Bar, Ombra and Arlechin to Rebecca Yazbek's Edition Group, formerly Nomad.
At Richmond Square, Grossi will deliver two concepts spanning 292 and 161 square metres, with full details to be announced next year.
Fortis associate director of development Mitch Crawford said securing Grossi's involvement was a strong vote of confidence in the precinct.
"When leading hospitality operators choose to commit to a precinct well ahead of opening, it's a strong endorsement of the destination being created," he said.
"The Grossi family has helped shape Melbourne's dining culture for more than 40 years, creating venues that have become part of the communities they serve.

Fortis has previously partnered with hospitality operators including Baker Bleu and Suupaa at Cremorne's 65 Dover Street development, and Neil Perry's Margaret, Cafe Margaret, Gran Torino and Pizzeria Sotto in Sydney's Double Bay.
Richmond Square comprises two residential towers alongside retail, office and dining space and is in its final construction phase. It is due for completion in the last quarter of 2026.
