Award-winning chef to open Hong Kong-inspired Stanley at Manly Wharf

A new 212-seat Chinese restaurant is set to take over the Manly Wharf site vacated by Merivale's Queen Chow, with award-winning chef Louis Tikaram opening Stanley in September.

The Hong Kong-inspired eatery, named after the harbourside district of Stanley Bay, will focus on seafood. Queen Chow, which opened in 2018, is one of five long-standing venues to exit the wharf in 2025, as owner Artemus Group presses ahead with a $4.5 million redevelopment of the precinct.

Artemus co-founder Adam Flaskas has previously said the goal is to make the wharf "a premium hospitality destination, creating a thriving community and cultural hub for kids and families to grown-ups and everything in between."

Tikaram already runs a Stanley outlet at Artemus's Howard Smith Wharves precinct in Brisbane. He was named the Good Food Guide's young chef of the year in 2014 and has worked at Longrain, Bentley Restaurant + Bar and Tetsuya's.

The Manly venue will feature indoor and outdoor dining, a private dining room, a dedicated bar, seafood tanks, a custom-built duck oven and tableside Peking duck service.

"Opening Stanley in Sydney is incredibly meaningful to me," Tikaram said. "Sydney shaped me as a chef.

"I arrived here as a young apprentice and spent 10 years learning from some of the best people in the industry.

"It's also where I first fell in love with the energy of Chinese restaurants... those experiences have stayed with me throughout my career."

Drawing on Cantonese cooking traditions, the menu will showcase Australian seafood, meat and seasonal produce.

Flaskas described Tikaram as one of Australia's most respected chefs. "We're proud to welcome him back to Sydney to create something truly special for Manly Wharf."
