Notti’s lands at Club Rose Bay as Merivale’s pizza-led Italian
Merivale will launch Notti’s, a new Italian restaurant by Totti’s creator Mike Eggert, at Club Rose Bay RSL — a fresh concept tailored to the venue, with pizza at its heart and no signature Totti’s flatbread.
Eggert said early discussions considered a Totti’s outpost, but the team pivoted to fit the club setting.
“We love how much people love Totti’s. And while it would be nice to do that, this is an RSL and we knew it wasn’t going to work,” he said. “So we literally were describing the food as Totti’s but not Totti’s. It’s Notti’s. And the name stuck.”
Positioned as the club’s main dining offer and servicing outdoor areas, Notti’s will focus on a lighter, crispier pizza base gaining traction overseas.
“I’m gladly putting pineapple on pizza. I believe it’s the greatest combo in world,” Eggert said.
The menu rounds out with pastas and pub comforts — think parmi over pasta, or steak and chips. “There is this throwback to ‘90s restaurants like No Names, serving up fun Italian food,” Eggert said. “It’s the food I love to eat. And my cooking mantra is, cook for the customer. The ego left the room a long time ago and it’s about giving the customer what they want.”
Club Rose Bay is Merivale’s first RSL. The hospitality giant assumed management of the struggling club after it entered receivership with debts estimated at about A$900,000.
Justin Hemmes has pledged to support the club’s revival, noting a commitment to “supporting Club Rose Bay, the Rose Bay RSL sub-branch and their members to re-establish the club, while preserving, honouring and enhancing the club’s rich history and war memorial.”
Opening is slated before year-end.
