Cottesloe pop-up to bring Michelin star flavour

Dave Pynt, the man behind Michelin-starred Singapore barbecue restaurant Burnt Ends, is set to bring his skill to Cottesloe’s Indigo Oscar.

The Perth native has worked in some of the world’s best restaurants including Noma and Asador Etxebarri. The Michelin starred chef will take over Indigo Oscar on May 10 and 11.

Burnt Ends has a 99-person capacity and specialises in dishes including WA marron to woodfired pavlova, kombu smoked butter beurre blanc and a 45-day dry-aged Blackmore’s striploin. It was recently named Asia’s 15th best restaurant in the annual World’s 50 Best Restaurant list.

Pynt will curate a dining experience combining Burnt Ends trademarks and seasonal WA produce.

Speaking about his famous pavlova Pynt told STM last year, “We burn it in the woodfired oven and we have some macerated fruits that also go through the oven.”

The Burnt Ends’ collaboration with the Latin American-inspired Indigo Oscar is limited to three seatings over the two-day takeover.

Diners will have the choice of a set 10-course dinner on May 10 or May 11 at $350 per person, or an eight-course lunch on May 11 for $295 per diner.

“WA has some of the finest produce in the world and I’m excited to be taking our kitchen to my home city,” Pynt said.

“This pop-up will see our team experiment with local seasonal ingredients and transform them using culinary techniques distinct to our Burnt Ends DNA.”

The collaboration was the brainchild of Matt Swinney, co-founder of Frankland River wine producer Swinney Wines.

Some dishes will be paired with Swinney wines, but are not included in the degustation.

“The collaboration began as a conversation over a glass of wine many years ago,” Swinney said.

“Dave and I wanted to do something local that celebrated world-class WA food and wine.

“We can now bring that dream to life.”

Alan Ford, head of hospitality operations at Fiveight, which runs Indigo Oscar, said

“We’re anticipating … the hottest, smokiest event on our calendar.”
