Shane Delia to open new wine bar with a Middle Eastern touch
Celebrity chef Shane Delia will open a new Middle eastern inspired wine bar in Melbourne’s Windsor at the end of June.
Moving into the old Biggie Smalls site on Chapel Street, Maha East will be a 40-seat wine bar celebrating wines from less-known regions in Turkey, Israel, Lebanon and the surrounds, and be a casual offshoot of the revamped CBD restaurant.
The menu will be led by former Maha sous chef Simon Lillico, with a focus on shareable plates such as Moraccon-spiced fries with housemade za’atar and kefalograviera cheese; hummus with “Persian-style” XO sauce (made with middle-Eastern fermented fish paste, saffron and turmeric); and savoury doughnuts filled with taramasalata.
Favourites from the restaurant will also make an appearance including the slow-roasted lamb shoulder with pomegranate and smoked almonds, and the Turkish-delight doughnuts.
