The Doss House is Sydney’s latest whisky bar

The Doss House on The Rocks in Sydney has been a number of things: a bootery, a boarding house, even an opium den.

But now the 170 year old business is settling as Sydney’s latest whisky bar.

And the focus is seriously on whisky.

It has 150 bottles of the stuff.

The whisky is showcased in American oak cabinets throughout the venue.

And the range is enormous, spanning international regions from Australia, Scotland, Ireland, Japan and the States.

There are also rare including 30-year-old Hibiki and Glenglassaugh, as well Nikka 'Taketsuru' Fortune 80 and a GlenDronach bottle from 1994.

And for those who are not into whisky, the Doss House has a range of classic cocktails.

These included signature drinks like The Dusky Scotchman (Laphroaig 10-year, Branca Menta, honey and saline), a blackberry and lemon myrtle fizz (blackberry-infused Stolichnaya, lemon myrtle, fresh lemon and Cynar) and My Name Is Earl (earl grey-infused gin, peach aperitif, orange marmalade, fresh lemon and basil).

School friends and Irish ex-pats Colm O’Neill and Eoin Daniels are the co-owners of the Doss House.

And they have consulted with one of Colm’s school friends, Bobby Carey (of Big Poppa’s, Shady Pines, and Riley Street Garage) Bar Manager Alex O’Brien (of Bar No. 5 and Archie Rose Distillery Bar) on the food and drinks menu.

“My favourite type of bar is one that you can find a cosy nook in, or a little bar you can sit up at and have a chat, with a tidy collection of drinks to choose from and with a smile,” O’Neill told delicious. “The reality is there’s some great bars in Sydney that already do that well. What makes our experience a little special is the fact you have this rare opportunity to choose a whisky from one of Australia’s finest producers or one of the best from abroad and enjoy it in a space that has this rich history attached to the walls unlike anywhere else. The building is steeped in stories you’d expect to hear from your Granny; old and romantic.”
