Pinbone come back with Italian Disco bottle shop

Kensington pop-up Pinbone has closed down but the good news is that Pinbone chefs Mike Eggert and Jemma Whiteman have resurrected something close to it.

They have transformed the pub's drive-through bottle shop into Mr Liquor Dirty Italian Disco. 

The change is being done with Merivale which snapped up the Botany Road pub for $37.5 million last year.

And it’s total bottle shop style.

Guests will be able to select their own booze, and that includes over 150 wines.

All they have to do is go to the walk-in fridge.

The other good part is that they can order food at the counter.

To do that, they can pull up a chair at one of the 90 seats set up in the driveway.

The pop-up will open on Friday, October 20.

And the plan is to run it for six months.

The food on offer will be focused on American accented Italian fare.

It will be “fun and fast, simple and delicious", Whiteman told Concrete Playground.

So the menu will centre around bruschetta, pasta and meats from the woodfired oven and grill.

"We went with the classic trio of bread/pasta, cheese and meat," Whiteman told Concrete Playground.

“We've been really inspired by the red sauce joints of New York,"  Eggert told Concrete Playground.

"We'll be pushing ourselves to get to their quality, but it'll have our essence, our touches. There'll be a little bit of seaweed here and there, a little bit of soy sauce. It's our take on the red sauce joint."

And there’s a few extras on the menu too.

The Dirty Disco menu will also include meat loaf with dill pickle, pastas and bruschetta topped with raw veal, whipped tuna with bitter greens.

All part of Whiteman and Eggert’s ability to add in a wild ingredient or two to classic dishes.
