Frenchies Bistro and Brewery opens in Rosebery

So Frenchies Bistro & Brewery has opened in Rosebery.

French-born duo Vincent de Soyres and Thomas Cauquil – that’s the head brewer and head chef, respectively – are bringing a bit of Parisian style food to Sydney.

They have put in some bistro lighting to add that bit of je ne sais quoi to the Rosebery warehouse’s dark beams.

And they have added some personal touches too.

One example is the venue's hand-crafted wooden tables.

They were actually made by de Soyres' dad at his farm in France.

What inspired them to go down this track?

According to de Soyres, the idea came when they were trekking through Eastern Siberia.

“We spent two months hungry, talking about food and beer," de Soyres told Concrete Playground.

The brewery, kitchen and bar are located on the ground floor.

It’s upstairs in the bistro, located in the mezzanine, where Cauquil will show his skills that he picked up working at Michelin-starred restaurants around the globe. These include Paris restaurants Le Miroir and Le Violon d'Ingres, Madrid's El Chaflan and Sydney's Moxhe.

The menu will change on a daily basis, depending on what seasonal and regional produce are available.

And the dishes it offers are not the sort you usually find in Sydney.

Like for example the veal tongue carpaccio, or the Balmain bug in puff pastry, the beef and bone marrow stew, the North African-style confit lamb and traditional Toulouse sausage with rosemary jus.

As for the beer, it’s produced on-site and de Soyres pairs it with the menu.

He describe his Biere de Garde range as "a bit like white wine, refreshing while complex and interesting".

He wants to convey each beer's terroir, that sense of place you usually use when you talk about wines. The core range of beer in the place includes Comet Pale Ale, made with wild American Comet hops, along with a German Kölsch and French IPA.

There’s also an Aussie Red Rye.
