The coffee cash system that will send your jaw dropping into your flat white

MEET Sydney’s most trusting baristas.

New customers to Bacino Bar in North Sydney get a surprise when they find out how to pay.

They are trusted to throw the right amount into a tray and to take the change out themselves if they need it. 

“It lets us get the coffees out as fast as we can,” said owner Chris Maraziotis.

“The emphasis is not on the money, it’s on the coffee.”

The cafe attracts queues of up to 30 people in the morning and they have about six staff pumping out the orders.

The system has developed over the past 15 years as they didn’t have the time to take all the money and the orders - but it has created a trusting relationship with the regulars.

“How many people would cheat the system? They come here, they love the coffee,” he said.

“One person throw in less, one person throws in more.

“In the end it saves a lot of time.”

Mr Maraziotis and his team know most of the customers and what they want without them even asking.

Flat whites and cappuccinos are the most popular orders and they serve hundreds of coffees every morning.

The vast majority of their customers are honest but the staff have caught people cheating the system.

One customer, about whom they were suspicious, went to throw his coins in the tray but when he realised it wasn’t there he pulled out a note.

“We caught him red-handed,” he said.
