Delicious and Easy Warm Lamb Salad

Spring is here and what better way to welcome a new season than with freshening up your menu with some delicious salads! Bega Foodservice has an extensive range of creamy salad dressings and vinaigrettes to ZoOSh up any meal.


Warm Lamb Salad 

Serves 4  |  Prep time 5 minutes  |  Cooking time 30 minutes



  • 600g pumpkin, cut into wedges
  • 1 red onion, finely sliced
  • 2 tablespoon olive oil
  • 1 bunch asparagus, cup into 3cm pieces
  • 1 tablespoon ZoOSh Balsamic Vinegar
  • 600g lamb backstrap
  • 60g rocket leaves
  • 30g Dairymont parmesan shredded
  • Parsley to garnish

  1. Preheat oven to 200°C.
  2. Combine the pumpkin and onion with 1 tablespoon of olive oil and spread over a baking tray.  Bake for 20 minutes.  Add the asparagus and cook for a further 10 minutes.
  3. Heat a griddle pan to hot.  Brush the lamb with 1 tablespoon of olive oil and cook lamb over high heat for 3 minutes on each side.  Remove from the pan, cover with foil and rest for 5 minutes.
  4. Toss the warm pumpkin, onion and asparagus with balsamic vinegar.
  5. Thinly slice the lamb and add to the pumpkin.  Add the rocket and parmesan and toss to combine. Transfer to serving bowls and garnish with parsley and extra parmesan.
