Warrnambool Magistrates Court has heard a Geelong-district man stabbed another man in the face at a Mortlake hotel.

The 35-year-old accused faced court on May 8, where it was revealed the type of knife used. The knife was embedded in the victim's face.

The Bannockburn man appeared in court charged with intentionally causing serious injury, reckless conduct endangering life and associated offences of violence.

It is alleged he used a butter knife to stab the 48-year-old alleged victim at Mac's Hotel on May 7, 2024, just after 6.30pm.

The victim from WA was flown to a Melbourne hospital in a stable condition with non-life-threatening injuries.

Emergency services attended the scene with ambulance officers treating the victim.

Detective Senior Constable David Hughson said the men were not known to each other and both were from out of town.

Magistrate Adriano Serratore asked for a hand-up brief be served on the defence by June 18. This includes witness statements and an accused's record of interview.

Bail was not sought and the man was remanded in custody to appear in the same court on August 23.

Staff at Mac’s Hotel were uninjured.

The stabbing comes amid a growing number of knife attacks, including the Bondi Junction attack, an attack on an Assyrian priest and an attack on a woman today at a Sydney gym.
