 Gluten Free Corn Chip Nuggets recipe

Serves: 4
Prep Time: 5 minutes
Cooking Time: 6-8 minutes

Ingredients:

• 230g Mission White or Yellow Corn Chips, crushed
• 2 Eggs, beaten
• 500g chicken, diced
  
  

Method:

1. Grind corn chips in food processor
2. Beat egg
3. Dip cubes of meat in egg then coat in crushed corn chips
4. Shallow fry until golden (or cooked through if meat)
   
   

Can substitute any meat, tofu or haloumi cheese
