A Tavola boys to open new Surry Hills restaurant Besser

ITALIAN restaurant Besser, from the same people who brought us A Tavola, will open in Kylie Kwong’s former home of 14 years, Billy Kwong in Crown St, Surry Hills, by month’s end.

It will be run by chefs Eugenio Maiale, Sandro di Marino, Luke Randall and sommelier Ennio Di Marco.

“We are trying to bring those days when we used to go out and eat with our parents,” says Maiale.

“All the dishes are really conceptual,” adds Italian-born head chef di Marino. “The dishes will be in sharing form.”

On entry is a striking 10m bar made up of 96 besser blocks, from which the restaurant takes it’s name, which will also stud the walls of the expanded space.

“We are going to be cooking chicken under a besser block,” says Randal. “It will be using a lot of Italian ingredients in an Australian way.”

One highlight will be a 6pm risotto.

“We are encouraging people just to walk in, but we will take bookings of six or more,” says Maiale.

Other menu items include braised chicken hearts. meatballs, gnocchi and garlic bread, of course.

Di Marco says behind the bar they will feature six Italian varietals and two Victorian reds, plus Italian craft beers.
