Byron at Byron gets a makeover
One of Australia’s favourite hotels, the Byron at Byron Resort & Spa has just had a revamp.
The six week renovation has given it a brand new look. There is also a new menu reflecting the region, seasons and the climate of Byron Bay with improved food options, focusing on regional, seasonal ingredients that combines European cuisine and Asian flavours.
Matthew Kemp, Executive Chef, The Byron at Byron says the menu will be distinctive.
“We will be concentrating on flavours that are beautiful, light, healthy and fragrant to create a cuisine unique to the Resort and Byron Bay. Using the finest local produce we will create an elegant and sophisticated experience focusing on inspiring flavour combinations,” Kemp told the Byron Bay blog.
Leading interior designers Luchetti Krelle and one of Australia’s most recognised chefs, executive Chef Matthew Kemp have given the venue a completely new feel.
Features at the hotel include a new copper island bar, a veranda, a monumental sandstone reception desk and a flagstone breezeway.
The veranda itself will extend the concept of living space, giving a feel that’s more “interior” than “exterior”. It will have a touch of luxury with beautiful Italian furniture and European lighting from SPACE, mixed with antiques, art and curiosities.
It also features work by 2015 Archibald finalist Julian Meagher who was commissioned by the hotel to paint a series of still life paintings featuring Australian natives. The paintings will be hung along the verandas of The Byron at Byron. They will combine with with suspended double-sided landscapes marking the transition from restaurant to courtyard.
