Barangaroo House to open in December

And so the Sydney food is abuzz with the latest piece of news: Solotel has brought in Matt Moran to run the multi-level Barangaroo House and the venue will open in December.

Not only that, they have recruited Cory Campbell from Noma and Vue de Monde as head chef.

It’s all added to a stable that includes Aria, Chiswick and Opera Bar.

The restaurant, located on three floors at Barangaroo House, still has to be named. But there’re plenty of time.

Getting Campbell is quite a coup for Solotel.

He has runs on the board in some of the world’s best kitchens, having spent four years working alongside Rene Redzepi at Noma in Copenhagen. And then of course, he is better known for the last six years being in charge of Shannon Bennett’s flagship Melbourne restaurant Vue de Monde.

Moran says they’ll be working as a team.

“Cory is the head chef and I'm the restaurateur," Moran told Good Food. "He's unbelievable – one of the smartest chefs I've met. You can see the Noma in him. That simplicity and use of great produce."

With the new venue promoting itself as the “new capital of Australian cuisine”, the aim is to create an authentic Australian flavour.

Moran stresses that the aim isn’t to create a three-hat restaurant with Campbell. He’s looking at something much more relaxed than that.

"It's not going to be fine dining, but it's not going to be bistro either. We're going to use the best of everything," he told Good Food.

Barangaroo House has been designed by Sydney architects Collins and Turner.

They have split it into three levels: a casual bar, a restaurant, and a rooftop garden bar.

The Solotel group is now working closely with Moran. With pubs in its portfolio including the Golden Sheaf and Newtown's Courthouse Hotel, it merged its operations with five Matt Moran restaurants and an events business last year.
