Anchor Cooking Cream and Mainland Cream Cheese are a winning combination

Ben Hoitink, who works at Yarralumla Bakery in Canberra, has discovered for himself the benefits of two terrific Fonterra products – Anchor Cooking Cream and Mainland Cream Cheese.
Ben uses Anchor Cooking Cream to make Chocolate Ganache and describes it as “a fantastic product”.
Anchor Cooking Cream is fabulous for ganache, it gives a very rich flavour and is ideal for decorative purposes,” Ben says. “Its reduced water content makes it a rich, thick cream – boil it up, add the chocolate and you get a nicely textured, workable ganache with a beautiful shine.
Ben also combines Anchor Cooking Cream with Mainland Cream Cheese to make cheesecakes for the bakery.
“We’ve just added cheesecakes to our range, starting with a standard cheesecake topped with raspberry coulis,” he explains. “It’s an ideal summer item – very popular in the warmer weather.
“Mainland Cream Cheese works very well, it doesn’t split and has great overall consistency,” Ben says. “Combining it with Anchor Cooking Cream gives the cheesecake a nice, light texture and flavour.”
He adds: “Anchor Cooking Cream’s reduced water content also gives the finished cake a much longer shelf life, up to two or three days.”
Ben found the cheesecake recipe in the new Mainland Cream Cheese Cookbook, available free from Fonterra Foodservices.
“It’s a neat cookbook,” Ben says. “Some of the recipes are really good and give you the opportunity to add a bit more variety to the menu.”
